Brownie Cookies
Butter cookies wrapped around a rich chocolate centre, with beautiful cracks that reveal the chocolate beneath.

These brownie cookies combine two doughs: a rich chocolate centre and a buttery outer layer. Gently pressing each cookie creates cracked edges that show the chocolate underneath.
Ingredients
Chocolate Layer
- 100 g butter
- 60 g powdered sugar
- 1 g salt
- 30 g egg
- 60 g melted chocolate
- 80 g all-purpose flour
- 40 g cocoa powder
- 3 g baking powder
Butter Cookie Dough
- 90 g butter
- 45 g powdered sugar
- 0.5 g salt
- 30 g egg
- 190 g all-purpose flour
Instructions
- Mix 100 g softened unsalted butter with 60 g powdered sugar until smooth and creamy.
- Add 30 g egg and mix well.
- Add the melted chocolate, 80 g all-purpose flour, cocoa powder, baking powder, and 1 g salt. Mix until well combined.
- Cover the bowl with cling wrap and refrigerate until the chocolate dough is slightly firm.
- In another bowl, mix 90 g butter with 45 g powdered sugar until smooth and creamy.
- Add 30 g egg and mix well.
- Add 190 g all-purpose flour and 0.5 g salt. Mix until a dough forms. This dough will be drier and easier to handle than the chocolate dough.
- Divide the butter dough into 24 equal portions and roll each into a ball. Divide the chocolate dough into exactly 24 portions and roll into balls.
- Gently flatten a butter dough ball. Place a chocolate dough ball in the centre, wrap the butter dough around it, and seal the edges. Repeat with the remaining dough.
- Arrange on a lined baking tray. Using a cookie press or a flat-bottomed glass, gently press each ball down. The cracks around the edges reveal the chocolate dough underneath.
- Bake in a preheated oven at 160°C for 15 minutes. For golden-brown, crispier cookies, bake for an additional 3–5 minutes.
