Ingredients
- 150 g all-purpose flour
- 100 g chickpea flour
- 4 g salt
- 3 g baking powder
- 150 g unsalted butter
- 100 g sugar
- 1 egg
Instructions
- Let’s begin by sifting all of the dry ingredients and putting them aside.
- In a mixing bowl, whisk butter and sugar together until light and fluffy. Add in the egg and mix well.
- Add in the sifted dry ingredients. Mix everything together until just combined.
- Take the dough out and place it in a freezer bag. Press and roll the dough until it’s about 5 mm thick. Refrigerate the dough for at least 2 hours.
- After chilling, cut into desired shapes using a cookie cutter. Brush a thin layer of egg wash over the cookies. Sprinkle some ground nuts on top.
- Bake in a preheated oven at 200°C for 12 minutes. Cool slightly, then enjoy your chickpea cookies.
Tip
- If the dough feels too soft to cut cleanly, chill it for 15 to 20 minutes longer before cutting.
